Ingredients

  • 10 large eggs

  • 1 cup riced cauliflower

  • 2 cups chopped kale

  • 3 cloves garlic, minced

  • ½ medium yellow onion, diced

  • 2 cups cubed sweet potato

  • ¾ cup ricotta cheese

  • 3 tablespoons chia seeds

  • 1 tablespoon flaxseed meal

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • 3 teaspoons fresh thyme

  • 2 tablespoons olive oil, divided


Directions

Step 1

Preheat oven to 425°F.

Step 2

Spread the cubed sweet potatoes on a lined baking sheet. Drizzle with half the olive oil and roast for 25–30 minutes, or until tender.

Step 3

While the sweet potatoes roast, heat the remaining olive oil in a cast iron skillet over medium heat.

Step 4

Add the onion, kale, and cauliflower rice. Cook for about 5 minutes, until softened.

Step 5

Add the minced garlic and cook for 1 additional minute. Remove the skillet from the heat.

Step 6

In a large bowl, whisk together the eggs, ricotta cheese, chia seeds, flaxseed meal, salt, pepper, and thyme.

Step 7

When the sweet potatoes are finished roasting, reduce the oven temperature to 375°F.

Step 8

Add the roasted sweet potatoes to the skillet, then pour in the egg mixture. Stir gently to combine.

Step 9

Bake for 20–25 minutes, or until the eggs are fully set. Let rest for a few minutes before slicing.
