Garden Harvest Turkey Stuffed Peppers

Ingredients
1 medium orange bell pepper, halved and seeded
8 oz lean ground turkey
2 tablespoons dry white rice
¾ cup fresh spinach, chopped
1 tablespoon extra virgin olive oil
½ teaspoon garlic powder
Pinch of kosher salt
Directions
Step 1
Preheat the oven to 375°F (190°C). Line a baking dish or baking sheet with parchment paper and place the bell pepper halves cut-side up.
Step 2
Cook the rice according to the package directions. Fluff with a fork and set aside.
Step 3
While the rice cooks, heat ½ tablespoon of the olive oil in a large skillet over medium heat. Add the ground turkey and cook for 5–7 minutes, breaking it apart as it browns.
Step 4
Stir in the chopped spinach, garlic powder, and a pinch of kosher salt. Cook for another 2–3 minutes until the spinach has wilted.
Step 5
Remove the skillet from the heat and stir in the cooked rice until well combined.
Step 6
Spoon the turkey mixture evenly into each bell pepper half. Drizzle the remaining ½ tablespoon of olive oil over the tops.
Step 7
Bake for 25 minutes, or until the peppers are tender and the filling is lightly golden. Serve warm.
